no bake coconut cookies or healthy almond joys?
Last month, I shared my gluten free, dairy free no bake oatmeal cookie recipe. Unfortunately, the oatmeal still seems to affect Lucas' skin, so I had to stop making them.
Then I thought, well coconut and oatmeal are kind of the same consistency, maybe I could substitute coconut for the oatmeal.
Let me tell you..they are so yummy! And, I can't decide if they are more like no bakes or almond joys!
I'd love to hear what you think if you decide to make them! They are SUPER easy!! :)
ingredients:1/2 cup coconut milk1/2 cup coconut oil3 tbsp almond butter (crunchy is better)1/2 cup of honey
mix ingredients in a pan on the stove and boil for 1 minute. Remove from heat and add the following:
4-5 tbsp cocoa1 tsp vanilla3-4 cups coconut
Mix together and drop by spoonful onto parchment paper until they harden slightly. They will be softer cookies.
Enjoy 1 or 2 or 5.... :)
