Recipe of the week: Easiest Bacon Potato Soup Ever!


There's just something about me being pregnant that has me craving soup, each and every pregnancy!! 
Thankfully the weather has gotten colder so soup is something that actually will work! :) 

Yesterday we spent the morning in the park and when we got home, all I could think about was potato soup! I couldn't find a recipe I liked or had all the ingredients for, so I made it up as I went and was quite pleased with how it turned out! 

Here's my version of bacon potato soup. Happy Fall everyone! :) 


Bacon Potato Soup:
5-6 large potatoes
1/2 cup fried up bacon (cut into bits)
4 cups whole milk
1/2 red onion, diced
salt and pepper
garlic salt
shredded cheese, chives (optional)

Peel and dice potatoes. Boil in water until tender. 
Meanwhile, fry up bacon and when almost ready, add in diced onion
When potatoes are tender, drain and put back on stove adding bacon, bacon fat and onions. Pour in 4 cups of milk (more or less depending on how thick of a soup you want) Add salt, pepper and garlic salt to taste and bring to medium boil. 
With immersion blender, blend up some of the potatoes to give it a heartier texture.
Serve with shredded cheese or chives (or both) on top and enjoy!
