I love Fall!

I have a serious love affair with Fall! And my goal? To instill this intense love for this season into my children! I knew I was succeeding when Nicholas began his apple picking countdown about a week ago and each day was devastated it wasn't yet time to go pick our apples! :) 
Yesterday, our day finally arrived. It's an annual tradition we do with our church. And I seriously love this day! This year was so great too! The weather was perfect. I think the high was 47...the chill in the air definitely makes picking the apples all the more like a Fall activity!

So with all those apples we picked yesterday, Columbus Day couldn't have fallen on a better day! The weather today is a high of 55 maybe, it's dreary and so fall-like and seriously one of the reasons I love fall so much! :) We put aside traditional book learning today for some fall crafts and projects and some  baking! After all, we have LOTS of apples! :)

And, now to wow you with my whiz-like baking skills, I wanted to share with you the easiest and well the easiest applesauce recipe you'll ever find! 

you need apples and a crockpot. That's about it. Oh yes, and cinnamon! :) 

Personally, I don't like adding sweetener to my applesauce. They are a nice combination of sweet and tart (especially if you combine various types of apples and get all those flavors juicing together) and I prefer to limit the sweet for me and the kids! :) In the past, I think I've added a touch of lime juice to the mix, but today chose just to do apples and cinnamon sticks.

Stick that in your crockpot on low for about 6-8 hours or until apples are nice and mushy and you're almost done!

after they have cooked fully, all you really need to do (depending on the texture you like) is either blend it all together (take out your cinnamon sticks first) or mash with a fork. Personally I like a bit of texture in my applesauce so I used a fork. 
The kids and I have already indulged!
